Its getting close to Thanksgiving – are home made pies on your baking list? Why not try this coconut flour pie crust for a flavorful, healthy alternative? Only 5 ingredients and simple to make, it adds a warm, complimentary flavor to pumpkin, pecan and apple pies.
1/2 c. coconut oil or melted butter
1/4 t. sea salt
3/4 c. coconut flour
1 -3 T. raw honey
Beat butter, eggs, honey & salt with a fork. Add coconut flour and stir into a ball of dough. Pat into a greased 9″ pie plate. Bake 8 – 10 minutes at 400 degrees. Let cool. Add filling!
I used only 1 T. of honey, so the crust only has a total of 17 g. of sugar. That’s just 2.5 g per slice. Grain free AND guilt free, you can have your pie and eat it too this Thanksgiving.
I made an Apple Cranberry pie with Walnut Coconut Sugar topping. Here’s how:
In a large bowl, mix together the following:
5 apples, peeled & diced
1/2 c. fresh cranberries
1/2 T. cinnamon
Juice of 1 lemon
1 T. Maple syrup
Pour into pie crust, sprinkle with topping
1/2 c. walnuts, chopped finely
1/4 c. coconut sugar
Cover with foil, bake at 375 degrees for 1 hour.
