Easy to make and no unwanted ingredients found in commercial energy bars, these home made energy bars will fill you up in a delicious and nutritious bite-size bar. They are vegan, too!

Vegan Home Made Energy Bars - Simply Healthy Life

Vegan Home Made Energy Bars Recipe

1 cup nuts (almonds, cashews, pecans, etc.)
1 cup shredded coconut
1 cup seeds (pumpkin, sunflower, etc.)
1/4 c. chia seeds
1/4 c. dried fruit (blueberries, cherries, raisins, etc.)
1/4 c. cacao nibs (dark chocolate chips OK for non-vegan version)
1/4 maple syrup
1/4 – 1/2 c. melted coconut oil

Combine all ingredients on food processor. Start with 1/4 cup coconut oil. Pulse 3 -4 times to combine ingredients. Add coconut oil if not tacky enough to stick together. Press mix into glass baking dish (8 x 8) and put in freezer for minimum 20 minutes.


*Optional Chocolate Topping


This optional chocolate topping makes these energy bars even more irresistible!

1/4 c. maple syrup
1/4 c. coconut oil
1/4 c. cacao nibs

Melt ingredients together nad drizzle on top of frozen energy bar mixture. Return to freezer for a minimum of 20 minutes.

Cut into bite size chunks and store in freezer for quick, grab and go bite size snacks!
